"Because the Jungle is full of such tales. If I made a beginning there would never be an end to them."  —Rudyard Kipling

Over the course of sixteen weeks, ending on Dec. 31, 2015, we published a series of stories at Eater Boston chronicling some the details involved in taking an empty space an turning it into Juliet. Find some excerpts from part 7 below, follow the link to Eater for the full story!

On The House: From Someday to Any Day, Juliet is Almost Here

"Today, about fourteen weeks after beginning, Juliet looks more like a restaurant than a construction site. It’s quiet in here. I can think in here."

"About a year ago we started to brainstorm a specific business plan with these corners in mind. Fifteen thousand people live within a half mile. We are two of those people."

"We answered the question 'When will you open?' with 'Soon.' We believed that."

"We want to offer them both the everyday and the extraordinary all at once. We won’t hide either one."

"Cilantro makes me happy; senseless vandalism makes me sad."
